On 4 December at 6pm, Executive Chef Robbo hosts a one-night, five-course dinner built around his forest-to-foreshore style. He’s joined by Highwayman Whisky’s Dan Woolley, who will talk you through each pairing and share the stories behind the pours.
The menu moves through bold coastal flavours and smoky, layered whiskies. It starts with wagyu corned beef pastrami and smoked pandanus wild kombucha, paired with a Highwayman Smok’n Old Fashioned. It follows with cured swordfish, buckwheat and hoop pine vincotto. Then comes Northern Rivers smoked duck with Davidson plum and slaw gim-bugak. The hero main is wild venison saddle with native river mint, smoked Pontiacs, sheep milk Manchego and asparagus, matched with a peated pour of Wake the Dead. Dessert is a Smoking Oak Chocolate Cigar with tonka bean, blackcurrant and muscatel, plus Geoffrey’s Drop whiskey ice cream paired with Geoffrey’s Drop aged muscat cask.
Tickets are $149 per person and include all five courses with whisky pairings.
